Dean Coffey was an Irish Franciscan priest who arrived in Sydney in 1839.
During Fr. Brennan’s absence from the Parramatta Diocese between 1842 and 1847,Dean Coffey was in charge and he later became the Parish Priest of Parramatta in 1852.
By 1854, the existing Parramatta church was too small so Fr Coffey OFM Conv commissioned a larger church and the Foundation Stone was laid on 13 August 1854.
He remained in the position of Parish Priest of Parramatta until his death in 1857. It was Dean Coffey who was responsible for the building of St Brigid’s at Prospect.
On 19 July, 1855, before the laying of the foundation stone of St Brigid’s by Archdeacon McEncroe, the Rev. Dean Coffey celebrated Mass at 10am.
